Fried tofu with mushroom

1 piece Tofu (hard) (1/2 lb)
1 pack mushrooms, any kind
1 egg
garlic
basil leaves
salt
pepper

Beat egg. Add salt, pepper, basil leaves in egg.
Slice tofu to 1cm slices
Heat up oil in pan
Dip tofu in egg mixture, pan-fry tofu till slightly brown on both sides
Add in garlic
Add in mushrooms
Pour leftover egg mixture in
Salt and pepper to taste

Serves 2

Little seasoning used, very natural mushroom taste and tofu's great. Tofu starts juicing out after a while so don't overcook.

Bake tilapia with asparagus

3 filets of tilapia
3 sticks of asparagus
3 slices of cheese
1 lime

Grease aluminium foil
Put tilapia on foil. Sprinkle salt and pepper on both sides of tilapia.
Add little bit of soy sauce over tilapia.
Squeeze half a lime over fish.
Throw cut asparagus around fish
Put cheese on top of fish
Wrap with aluminium foil
Bake 350F 10min or until fish is cooked.
Squeeze rest of lime over everything.

Soy sauce chicken

It's chicken again cos I still have chicken from the $7 family pack of drumsticks


4 drumsticks
1 pack enoki mushroom
1 tomato
ginger
1 chilli

Marinate drumsticks in soy sauce, wee bit of sugar, pepper, sesame oil overnight
Dump marinate + chicken in a pot and start cooking
Add a bit water to prevent drying up
Chop ginger and chilli and add to pot
Chop mushroom and tomato and add to pot
Cover lid, stir occasionally
Cook for ~20min or until chicken is completely cooked

Great chicken texture

Hainanese baked chicken


It's like chicken rice, but baked.


15 drumsticks
2 heads of garlic
equal amount of ginger
1.5 red chili
2 limes

Chop garlic, ginger and chilli finely. Or better yet, grind them all together in a grinder or mortar
Mix above mixture in cooking oil.
Squeeze 1 lime into mixture.
Add salt to taste. If too sour, add sugar.
Roll chicken in mixture and put in baking tray. Pour excess over chicken. Marinate overnight if possible.
Bake 375F 20min
Squeeze the other lime into a bowl with oil, soy sauce, salt and water.
Pour over chicken to prevent chicken from drying up/ burning.
Bake 375F for another 15min or until chicken is cooked throughout
